The BEST Oatmeal, Pecan, Chocolate Chip Cookies!

I promise,  you will not be disappointed with this oatmeal cookie recipe.
If you're anything like me it can be frustrating at times trying to find that "perfect recipe" when searching on Pinterest or online for new recipe ideas.  Nothing worse than buying all the ingredients, then going home to make it, and then realizing it looks and tastes nothing like the picture.  Well I promise you if your an oatmeal cookie lover this is NOT one of those recipes!
Although I cannot take all the credit for this yummy cookie recipe, it is by far the best Oatmeal cookie I have ever baked or had.  A dear friend of mine shared this recipe with me a couple years back and it is now a staple in our home.  It is my go to recipe for sure all year round.  So with Christmas on the way I thought this would be a fun and easy recipe to share with you all.  I like simplicity and I love recipes that call for ingredients that you would typically have on hand already.  Or may only need to pick up a few items at the grocery store to make.  I would love to hear your feedback... TIP: For best results have your butter and egg at room temperature.  The cookies come out the best with    this step in mind.  I normally take my butter out the night before if I'm planning to make cookies for the following day.

BAKE: 350' for 12-15 minutes
If you like your cookies on the softer side try 12 minutes to start.  Keeping in mind that all ovens are different so you may want to test the first batch to see what the appropriate timing is for your oven.

RECIPE:
DRY INGREDIENTS
2 cups of Quick Oats
1.5 cups of Flour (all purpose)
1 teaspoon of Baking Soda
1/4 teaspoon of salt
Mix together and set aside

WET INGREDIENTS
1 cup of Butter
1.5 cups of Brown Sugar
1 Egg
1 teaspoon of Vanilla extract
In your mixer, mix butter and sugar until well incorporated.
Add your egg and mix well.  Add vanilla extract.
Now add all your dry ingredient and mix.

LASTLEY
1 cup of Chocolate Chips
1 cup of chopped Pecans (Optional)
Mix into batter.
Measure 1 tablespoon of batter into balls and place on cookie sheets.
Press down a bit on each ball to flatten a little and bake!

They look delicious. Do the oats have to be quick oats or can they be regular oats?

Ok, I will be stopping at the grocery store on the way home tonight ;)
The Cinnamon and brown sugar idea sounds fantastic too! I should probably stop at the mall and buy a larger size jean. LOL!

Oh Miss Sarah... now I've got to make TWO batches of these cookies. One with all the ingredients and one without the choc. chips but with a smidge of brown sugar & cinnamon sprinkled on top (for me ;) ). Nikka & Peter like the choc. chips. Thank you for the recipe.
